What is Chicken Haddie? It is a boneless mixture of quality white fish - hake and/or cod and/or pollock. It is a staple in most cupboards here, passed down from one generation to the next! Try it right out of the can as a tasty snack or it can be used in any recipe that requires fish such as chowders, fish cakes, pasta dishes and more!
Here is a fast and easy recipe for fish cakes that is sure to please the entire family:
Traditional East Coast Fish Cakes
Total Prep Time: 15 minutes Makes: 12 patties
3-4 cups mashed or whipped potatoes. 1 small minced onion. 1 egg (optional). 1 can (397g) Chicken Haddie (drained). 1/2 tsp salt, 1 tsp pepper, 1 tsp Savory (optional). Crushed cracker crumbs (Breton crackers are excellent in this recipe or any favourite cracker).
Mix the mashed potatoes with a can of Chicken Haddie, cracker crumbs, onion, egg and spices. Form patties (about the size of the palm of your hand) and coat with additional cracker crumbs if desired. Pan fry in a small amount of cooking oil (coconut oil is great for this recipe and adds a nice flavour) on med-high heat until golden brown (about 3 to 4 minutes each side). Serve with tartar sauce and/or ketchup!
