Salt Water Taffy is a soft, yet chewy textured candy that is achieved by stretching and pulling the cooked sugar mixture to incorporate air and break up the sugar crystals. Despite the name, it doesn't contain any saltwater, but  it does contain salt to balance the sweetness.
